The cocoa pods used for this chocolate are fermented using the heat from wood fires, giving this taster a unique smokey punch alongside characteristic spicy notes and rich cocoa depth from the Forastero and Trinitario beans. A real treat, garnished with raw panela sugar from Mexico and tart natural raspberry to wake you from this dream!
Single Origin Ecuador:
This beautiful chocolate is made using fine beans from pods grown in the coastal and central provinces of Ecuador. With notes of banana, tropical fruit and a lasting bitterness, we have paired it simply with crushed fresh hazelnuts to compliment the aromatic flavour of the cocoa.
Single Plantation Alto El Sol Peru:
The Criollo and Trinitario varieties of cacao is a long standing favourite of ours, all of our signature chocolates are made using these fine, delicate beans. This spectacular chocolate is made using organic beans from pods grown in the Alto El Sol plantation in the heart of the Natural Park Rio Abiseo, by the Saavedra del Castillo family with the help of six farmers. With intense aromatic red fruit and acidic flavour profile which changes with each crop, this chocolate deserves only the most simple garnish of delicate sea salt
